Šťávy

Mezi hlavní džusy většiny barů patří brusinka, grapefruit, citron, limetka, pomeranč a ananas. Mezi další džusy, které by bary mohly nabídnout, patří jablečný, mrkvový, škeble, olivový, granátové jablko a rajčata.  

 

Soda sycená

Sladidla

Pokud neokrajujete okraj sklenice nebo neděláte staromódní staromódní způsob, cukr za tyčinkou se většinou používá v tekutém stavu, kterému se říká „jednoduchý sirup“. Mléčné výrobky

Nejběžnější mlékárna za mřížemi je půl na půl (půl mléka a půl smetany). Jiné mléčné mixéry, které lze nalézt za mřížemi, jsou smetana, vejce, vaječný koňak, zmrzlina a nesolené máslo.   1 šálek vody, horké nebo vroucí

1 hrnek krystalového cukru dle vašeho výběru

 

Nyní existuje několik způsobů, jak spojit vodu a cukr a vytvořit jednoduchý sirup. Stačí si vybrat ten, který vám vyhovuje.

 

  1. Nalijte cukr a horkou nebo vroucí vodu do mixéru a poté mixujte, dokud se cukr nerozpustí (asi minutu).

Nechte sirup vychladnout a poté jej skladujte v lahvích nebo sklenicích v lednici po dobu až jednoho týdne. Pokud potřebujete udělat více, zvyšte porce. Cukr v tomto základním receptu lze nahradit medem, agáve, Splenda, javorovým sirupem, hnědým cukrem nebo čímkoli chcete.

 

Nyní řekněme například, že chcete vyrobit zázvorový sirup. Stačí přidat horkou vodu s příchutí zázvoru s cukrem a máte zázvorový sirup. Chcete-li vyrobit vodu s příchutí zázvoru , omyjte trochu zázvoru, nakrájejte ho na plátky, vložte do hrnce s vodou a přiveďte k varu. Jakmile se začne vařit, ztlumte a vařte asi třicet minut, aby se z kořene zázvoru extrahovala chuť zázvoru. Až budete připraveni, sceďte zázvor a poté přidejte cukr do zázvorové vody. Míchejte, dokud se cukr nerozpustí a voila! Udělal jsi zázvorový sirup.

 

Nyní řekněme, že chcete udělat okurkový sirup. No, okurky jsou choulostivější než perník, takže budete chtít nakrájené okurky vylouhovat vodou ve sklenici a poté je nechat několik hodin uležet na lince. Sklenici můžete několikrát zamíchat, aby okurky rychleji uvolnily chuť. Po dokončení už jen sceďte vodu z okurek do hrnce a nechte na střední. Aby se cukr rozpustil, budete muset okurkovou vodu ohřát dostatečně teplou.

 

Nyní víte, jak vyrobit jakýkoli jednoduchý sirup nebo jakýkoli ochucený jednoduchý sirup, který chcete, s jakýmkoli ovocem, zeleninou, kořením nebo bylinkou. Navíc při výrobě citrusového sirupu z citronů, limetek, pomerančů atd. použijete pouze kůru z ovoce, nikoli maso.

 

Grenadine : Nahraďte část vody šťávou z granátového jablka.

Čajový sirup : Čajové sáčky přidejte do vody při zahřívání.

 

Až budete připraveni na další úroveň, buďte kreativní a vyzkoušejte kombinace jako medovo-zázvorový sirup, mátově-agávový sirup, skořicově-pomerančový sirup, jalapeño-javorový sirup atd.

 

Margarita Mix

Proč používat směs Margarita z obchodu, když si to pravé (a lepší) můžete vyrobit doma? Pokud se chcete vyhnout cukru a potřebujete nízkoglykemickou variantu, zkuste Markus Sweet, sladidlo Monkfruit, stévii nebo xylitol.

Připraví 6 šálků

 

2 šálky čerstvé limetkové šťávy

2 šálky jednoduchého sirupu

1 (46 uncí) plechovka ananasové šťávy (čerstvě vymačkaná ananasová šťáva)

2 (15 uncí) plechovky kokosového krému Coco Lopez

6 kapek vanilkového extraktu

 

Všechny ingredience mixujte v mixéru po dobu pěti sekund a poté dejte do lednice. Vydrží dva dny a vždy ho můžete zamrazit.

 

 

Směs jahodových daiquiri

Poděkujete sami sobě, že jste si udělali čas na výrobu vlastní jahodové směsi. Pokud se chcete vyhnout cukru a potřebujete nízkoglykemickou variantu, zkuste Markus Sweet, sladidlo Monkfruit, stévii nebo xylitol.

Všechny ingredience mixujte v mixéru asi deset sekund. Zastavte, ochutnejte a poté upravte množství jednoduchého sirupu, limetkové šťávy a jahod podle vašich osobních preferencí. Dejte do lednice. Vydrží tři dny a vždy ho můžete zamrazit. Pokud chcete, aby vydrželo dva týdny, vynechte čerstvou limetkovou šťávu a přidejte ji do mixéru, když připravujete jahodové daiquiri nebo margaritu.

 

Bar Punch

Potřebujete něco rychlého k výrobě Rum Punch, aniž byste museli sbírat pět nádob? Poté stačí tyto ingredience dát dohromady. Pokud potřebujete méně, překrojte recept na polovinu.

Tento recept vám pomůže začít vyrábět vlastní směs Bloody Mary. Můžete si jej upravit podle vlastních chuťových preferencí. Můžete přidat i další ingredience, jako je pečený česnek, rozmarýn, bazalka, kostky hovězího bujónu, wasabi, avokádo, jablečný ocet, chilli a bitters.

Dělá 1 galon

 

2 unce limetkové šťávy

8 uncí A.1. omáčka

4 unce syrového křenu (volitelné)

8 uncí Lea & Perrins Worcestershire omáčka

1 vrchovatá lžíce kuliček černého pepře, rozmixovaná

1 vrchovatá lžíce celerového semínka, rozmixovaného

2 (46 uncí) plechovky celých švestkových rajčat

Voda podle potřeby

Pokud chcete, kapky omáčky Tabasco

 

 

Přidejte šťávu z limetky,  A.1. omáčka, křen a worcesterská omáčka do velké nádoby s otevřeným hrdlem. Celerové semínko a kuličky pepře nasypte do mixéru a mixujte na nejvyšší výkon po dobu třiceti sekund, a poté vysypte do velké nádoby. Naplňte mixér do poloviny celými švestkovými rajčaty a poté přidejte vodu, abyste naplnili. Mixujte na vysokou teplotu po dobu dvaceti sekund. Jemně sceďte do nádoby. Pokračujte v tomto kroku, dokud nejsou všechna rajčata rozmixovaná a pasírovaná. Všechny ingredience smíchejte, nalijte do sterilizovaných sklenic nebo lahví a dejte do lednice.

 

Růžová voda

Super Juice

In 2020, Louisville, KY bartender Nickle Morris, working with Ryan LeClaire at Expo, introduced the cocktail world to Super Juice, a technique that allows bartenders to get dramatically more usable citrus juice from lemons and limes while reducing waste and cost. Instead of simply squeezing a fruit and throwing away the peel, Super Juice uses the peel, fresh juice, water, and food-grade citric and/or malic acid to reproduce the acidity and fresh citrus character needed in cocktails.

1. 2020 — Nickle Morris & Ryan LeClaire — introduced the original Super Juice / oleo citrate concept.

2. Kevin Kos — modified and popularized his own Super Juice method.

3. Darcy O’Neil — Art of Drink — chemist and bartender who developed an Improved Super Juice method using a high-powered blender to extract citrus oils, eliminating the oleo-citrate waiting period.

4. Brian Tasch — developed Pseudo Citrus, including Lemon Aid and Lime Support.

5. Jazz Wang — Very Good Drinks — developed another variation on the Super Juice technique.

The process begins by peeling the citrus and combining the peels with powdered acids, which pull the flavorful essential oils from the peel. The mixture is then combined with water and the freshly squeezed juice, blended, and strained. Depending on the recipe, a handful of lemons or limes can produce around a liter or more of usable citrus juice, rather than the relatively small amount you'd get by squeezing the fruit alone. It also keeps its fresh character considerably longer than ordinary fresh-squeezed citrus when refrigerated.

Super Juice isn't just useful for cocktails. It's excellent for lemonade, limeade, punches, Margaritas, Daiquiris, Whiskey Sours, batched cocktails, and anywhere else you'd normally use fresh lemon or lime juice. It can reduce citrus cost and waste while giving a bar much more consistent acidity from batch to batch. Modern recipes and ratios vary, and bartenders continue experimenting with the technique.

➜ After I made Super Lemon Juice for the first time, I couldn't tell the difference between it and fresh-squeezed lemon juice. Then I used just six lemons (about 5 ounces of fresh-squeezed juice) to make two gallons of lemonade for a BBQ. Everyone was blown away by how good it was. The BBQ host immediately wanted to start a lemonade stand after realizing how inexpensive it was to make.

Apparently, all we needed was six lemons and a business plan.

Good to know: Although Super Juice was introduced in 2020, the basic idea behind it is centuries old. As far back as the 1600s, punch makers used sugar to extract the flavorful oils from citrus peels, creating oleo-saccharum (“oil-sugar”). Super Juice uses a similar principle, except citric and malic acids pull the oils from the peel to create oleo citrate, which is then combined with water and fresh juice. So, like many things in modern bartending, what's old is new again—we just added a gram scale and gave it a cooler name.

Basic Super Juice Method

I won't give all five bartenders' recipes here, because lemon and lime require different acid ratios, and the technique has continued evolving since Morris introduced it. Instead, I'd say:

You'll need: clean, washed citrus fruit,
food-grade citric acid, —​SHOP
food-grade malic acid, —SHOP

a gram kitchen scale, —SHOP

fine-mesh strainer, conical sieve or nut milk bags or both, —SHOP

clean, sterilized glass bottles or jars, —SHOP

filtered water, a vertical vegetable peeler, and a blender.

.

  1. Wash and dry citrus. Carefully peel the citrus, avoiding as much bitter white pith as possible.

  2. Weigh the peels.

  3. Add the appropriate amount of citric and/or malic acid.

  4. Allow the acids to extract the citrus oils.

  5. Juice the peeled fruit.

  6. Add water and the fresh juice.

  7. Blend and fine-strain.

  8. Bottle, label, date, and refrigerate. Will stay good for 2 weeks.

For me, I used Darcy's method: a high-powered blender to extract citrus oils, eliminating the oleo-citrate waiting period. I mean, he has a chemist background.
And I used both a conical sieve and nut milk bags to fine-strain.

Carbonated Mixers

Most bars stock cola, diet cola, ginger ale, lemon-lime soda, soda water/club soda, tonic water, and sparkling mineral water.

Other possibilities include ginger beer, root beer, grapefruit soda, flavored sparkling waters, sparkling lemonade, and premium craft tonics and sodas.

 

Good to know: Ginger ale and ginger beer are not the same thing. Ginger beer generally has a much stronger ginger flavor and is the traditional mixer for drinks such as a Moscow Mule and Dark 'n' Stormy.

And tonic water isn't soda water. Tonic contains quinine and sweetener. Soda water is basically carbonated water.

Your Gin & Tonic knows the difference.

Sweeteners & Syrups

Granulated sugar doesn't dissolve particularly well in a cold cocktail, so bartenders commonly turn it into simple syrup first.

Basic simple syrup is equal parts sugar and water. No fancy equipment required. If you can dissolve sugar, congratulations—you've entered the syrup business.
 

Today's bars use an enormous variety of sweeteners, including:

Simple syrup • rich simple syrup • demerara syrup • honey syrup • agave nectar • maple syrup • grenadine • gomme syrup • orgeat • coconut cream • fruit purées • flavored syrups

And then bartenders start infusing them with herbs, spices, fruits, vegetables, peppers, teas, coffee, and whatever else isn't nailed down.

Simple vs. Rich Simple Syrup

Simple syrup: 1 part sugar + 1 part water.

Rich simple syrup: 2 parts sugar + 1 part water.

Rich syrup is sweeter, so you generally use less of it in a cocktail.

Dairy, Eggs & Creamy Stuff

Traditional creamy cocktail ingredients include milk, half-and-half, heavy cream, ice cream, eggnog, eggs, and unsalted butter.

Modern bars may also stock oat milk, almond milk, soy milk, coconut milk, and coconut cream.

Good to know: Aquafaba—the liquid from cooked chickpeas—is sometimes used instead of egg white to create foam in cocktails.
 

For cocktails containing egg white, use pasteurized egg whites or pasteurized eggs when the egg won't be cooked. The FDA recommends pasteurized eggs or egg products in uncooked preparations and beverages containing eggs.

Your Whiskey Sour does not need a side of Salmonella.

Depending on the bar, you'll also find:

Bloody Mary mix • Margarita mix • Piña Colada mix • sour mix • strawberry mix • apple cider • coffee • cold brew • espresso • tea • hot chocolate • coconut water • hot water • shrubs • drinking vinegars • verjus

You can buy many cocktail mixes premade, and quality varies enormously.

But when practical, fresh-made wins.

Added Ingredients

Not everything added to a cocktail technically qualifies as a mixer. Bartenders also use small amounts of ingredients to adjust flavor, aroma, texture, heat, or seasoning.

These include fresh herbs, spices, bitters, tinctures, hot sauce, Worcestershire sauce, steak sauce, horseradish, jams, preserves, marmalades, salts, peppers, and vinegars.

Saline Solution

Just as a pinch of salt can improve food, a few drops of diluted salt water can enhance sweetness, soften bitterness, and make flavors pop in a cocktail.

Yes, we've reached the point where bartenders season drinks.

Grandma was right about salt, too.

Shrubs

Sweet-tart drinking vinegars generally made from fruit, sugar, and vinegar. They're excellent with spirits, soda water, or in nonalcoholic cocktails.

Verjus

The tart juice of unripe grapes. It provides acidity without tasting exactly like lemon or lime and works well in cocktails, especially wine- and spirit-forward drinks.

Homemade Cocktail Mixer Recipes

Simple Syrup

Have you ever stirred sugar into iced tea only to find half of it sitting on the bottom of the glass?

That's why bartenders use syrup.

Basic Simple Syrup

1 cup sugar
1 cup hot water

Combine the sugar and water and stir, shake, or blend until completely dissolved. Allow to cool, transfer to a clean container, label and date it, and refrigerate.


Homemade syrups don't have one universal guaranteed shelf life because preparation, sugar concentration, sanitation, ingredients, and storage all matter. 

Make small batches, keep refrigerated, and discard if you notice mold, fermentation, an off smell, or other signs of spoilage.

That's safer than promising readers an exact month.

Basic low-glycemic Simple Syrup
Same as above but replace the sugar with;
Monk fruit & Allulose blend

Rich Simple Syrup

2 cups sugar
1 cup hot water

Same idea, just sweeter and more concentrated.

Flavored Syrups

Once you understand simple syrup, you can make almost anything.

For tougher ingredients such as ginger, cinnamon, peppercorns, or spices, heat or simmer them in water to extract their flavor.

For delicate ingredients such as mint, basil, cucumber, or flowers, use gentler infusions so you don't cook away their fresh character.

Then strain and sweeten.

Try:

Ginger • mint • basil • rosemary • cinnamon • jalapeño • cucumber • strawberry • blackberry • vanilla • coffee • tea • lavender

Then start combining flavors:

Honey-Ginger
Mint-Agave
Cinnamon-Orange
Jalapeño-Maple
Blackberry-Sage
Strawberry-Basil
Vanilla-Demerara
Rosemary-Grapefruit

This is where bartending starts turning into cooking.

Except you get tipped for it.

Citrus Syrups

You can infuse syrup with citrus peel, use juice, or make oleo-saccharum, where sugar pulls fragrant oils from citrus peels.

Grenadine

Grenadine is traditionally pomegranate syrup—not cherry syrup.

An easy homemade version:

1 cup pomegranate juice
1 cup sugar

Warm just enough to dissolve the sugar, then cool and refrigerate.
 

You can get fancier with orange-flower water or other flavorings, but pomegranate is the star.

And suddenly you discover why homemade grenadine doesn't taste like melted red Popsicles.

Margarita Mix

2 cups fresh lime juice (or super lime juice)
2 cups simple syrup
2 cups water

Combine and taste.
 

Want it tarter? More lime.

Sweeter? More syrup.

Lighter? More water.

Some bartenders add orange juice, but remember that a Margarita itself traditionally gets its orange flavor from orange liqueur, such as Curaçao, Cointreau, or triple sec.

Keep refrigerated, make in small batches, and use promptly.

Homemade Sour Mix

2 cups fresh lemon juice (or super lemon juice)
½ cup fresh lime juice (or super lime juice)
2 cups simple syrup
1 cup water

Combine and adjust to taste.

If you're making a Whiskey Sour, add pasteurized egg white or another foaming agent when making the drink. FDA food-safety guidance specifically recommends pasteurized eggs for uncooked egg-containing beverages.

Piña Colada Mix

Pineapple juice
Cream of coconut (the original brand is Coco López)

Blend until smooth and adjust the ratio to your preference.

Cream of coconut is not coconut cream.

Cream of coconut is sweetened and designed for drinks and desserts.
Coconut cream is generally unsweetened.

Mix those two up and your Piña Colada will immediately file a complaint.

Strawberry Mix

2 cups fresh or frozen strawberries
½ cup fresh lime juice (or super lime juice)
1 cup simple syrup

Blend until smooth and adjust to taste.

Fresh strawberries are wonderful in season; frozen strawberries are often excellent because they're picked ripe and give you consistency year-round.
 

Use this mix for Strawberry Daiquiris, Margaritas, lemonades, mocktails, frozen drinks, and other cocktails.

House Punch mixer

4 cups fresh orange juice
4 cups pineapple juice
2 cups homemade grenadine
4 cups sour mix

Combine, refrigerate, and use as needed.
 

Add rum, and you've got the beginnings of a party.

Top that with a hefty float of dark rum, and you've got the beginnings of a story.

Bloody Mary Mix

Whole peeled plum tomatoes, canned or quality tomato juice
Fresh lemon or lime juice or both
Worcestershire sauce
Prepared horseradish
Black pepper
Celery seed
Hot sauce
A.1. sauce, optional (Cheryl's secret ingredient)

Blend and adjust to taste.
