Every famous cocktail has a story—or at least several people who swear they know the story. Some were created by legendary bartenders, some were happy accidents, some were invented to sell a bottle that nobody wanted, and others have histories so tangled that cocktail historians are still arguing about them today. Along the way, these drinks have been influenced by wars, Prohibition, movies, celebrities, presidents, world fairs, clever marketing, excess inventory, and the occasional bartender just trying to clean out the basement.

 

So pull up a barstool. We’re going around the world to meet the drinks that made cocktail history—and the fascinating characters who poured them.

大多数人认为,如果不是 Antoine Amedee Peychaud (1803-1883),Sazerac 就不会是今天的样子。 Peychaud (pay-SHOWED) 是法国人,但不知道他何时来到新奥尔良,因为他是在海地革命 (1791-1804) 期间逃离混乱撤离的众多人之一。

New Orleans has created so many cocktails that not all of them can get their own five-page family history, cemetery search, and phone call to a descendant.

So, here are a few more drinks the Crescent City slipped into cocktail history.

Absinthe Suissesse

The Absinthe Suissesse is an old New Orleans breakfast/brunch cocktail made with absinthe, orgeat, egg white, and cream or milk. Although it's often associated with the Old Absinthe House, its exact creator and birthplace are uncertain.

 

The famous absinthe drink that traces back to the Old Absinthe House is the Absinthe Frappé, created there by bartender Cayetano Ferrer in 1874.

Apparently absinthe for breakfast seemed perfectly reasonable at the time.
 

Café Brûlot Diabolique — Antoine's

Brûlot means “burnt” or “burned,” and this spectacular tableside production combines coffee, Cognac or brandy, citrus peel, spices, and fire.

It is generally credited to Jules Alciatore, son of Antoine Alciatore, who founded Antoine's in 1840. Jules also gets credit for creating Oysters Rockefeller.

The drink is prepared tableside using special equipment while flaming liquor cascades dramatically into the bowl.

Because apparently New Orleans looked at after-dinner coffee and thought, “Needs fire.”

Cajun Martini — K-Paul's Louisiana Kitchen

Chef Paul Prudhomme introduced his fiery Cajun Martini at K-Paul's Louisiana Kitchen in the French Quarter during the 1980s.

The basic idea was wonderfully simple: infuse vodka with hot peppers and make a Martini out of it.

Prudhomme called his version Chef Paul Prudhomme's Original K-Paul's Cajun Martini “Totally Hot.” A bottled version followed, made with vodka, vermouth, and cayenne peppers.

It was a Martini that fought back.

Cocktail à la Louisiane — Restaurant La Louisiane

The Cocktail à la Louisiane, also called simply La Louisiane, was the house cocktail of the historic Restaurant La Louisiane, which opened in 1881 at 725 Iberville Street. Its exact creation date and bartender aren't known, so I would remove your definite “invented in the 1880s.”

Made with rye whiskey, sweet vermouth, Bénédictine, Peychaud's Bitters, and absinthe, it's practically a cousin of the Vieux Carré and Sazerac.

Today, the 21st Amendment Bar at La Louisiane occupies the historic space.

New Orleans bars may disappear, but their cocktails have a habit of refusing to leave.

Frozen Irish Coffee — Molly's at the Market

Created in 1991 by Jim Monaghan Sr. at Molly's at the Market, the Frozen Irish Coffee became a French Quarter favorite: cold, creamy, boozy, caffeinated, and perfectly suited to New Orleans weather.

Basically an adult milkshake with somewhere to be.

Hand Grenade® — Tropical Isle

Created by Earl Bernhardt and Pam Fortner around the time of the 1984 Louisiana World Exposition, the Hand Grenade became synonymous with their Tropical Isle bars on Bourbon Street.

The neon-green drink is served in its unmistakable grenade-shaped souvenir container, and both the name and recipe are protected.

It became one of Bourbon Street's most recognizable to-go drinks.

Because nothing says “responsible adult beverage” quite like drinking it from a hand grenade.

Obituary Cocktail

The Obituary Cocktail is another mysterious New Orleans classic, but I would remove the claim that it was invented at Lafitte's Blacksmith Shop unless you have an original source for it. I couldn't find solid historical evidence supporting that origin.

The drink itself is beautifully simple and appropriately dangerous:

2 oz gin, ¼ oz dry vermouth, ¼ oz absinthe. Stir with ice and strain into a cocktail glass.

In other words:

A Martini with its affairs in order.

Also, I'd be careful calling Lafitte's Blacksmith Shop “the oldest bar in New Orleans.” The building dates to the 18th century and is one of the city's oldest surviving structures, but its famous association with Jean Lafitte isn't supported by documentary evidence, and its history as a bar is considerably newer. The National Park Service specifically notes that evidence does not confirm the Lafitte legend.

Roffignac

Count Louis Philippe Joseph de Roffignac served as New Orleans's ninth mayor from 1820 to 1828 and was the city's last French-born mayor. He helped modernize New Orleans with street improvements and gas lighting.

A drink bearing his name appeared in New Orleans by at least 1874, although its creator remains unknown. It later became a signature drink at Maylie's, the legendary New Orleans restaurant that remained open until 1986. When Maylie's closed, the Roffignac largely disappeared with it.

Then the modern craft-cocktail movement went digging through old books and brought it back.

And here's a fascinating bit of cocktail detective work worth adding: Stanley Clisby Arthur's 1937 recipe called for whiskey, soda, sugar, and a mysterious ingredient printed as “red Hembarig.” Researchers eventually connected the strange wording to German Himbeer Essig—raspberry vinegar, essentially a raspberry shrub.

It took cocktail historians decades to discover that one of the ingredients may have basically been a typo.

That's cocktail history in a nutshell.

A modern version can be made with Cognac or whiskey, raspberry shrub, and soda water.

Adopted New Orleans Cocktails

New Orleans didn't invent every cocktail associated with the city. Some drinks simply arrived, unpacked their bags, found a good barstool, and never left.

These cocktails were born elsewhere but became so intertwined with New Orleans drinking culture that we've practically adopted them.

Pimm's Cup — New Orleans's Favorite British Immigrant

The Pimm's Cup was born in England, not Louisiana, but Napoleon House made it a New Orleans institution. It's light, refreshing, relatively low in alcohol, and remarkably well suited to drinking on a sweltering New Orleans afternoon.

The British gave us the Pimm's Cup.

New Orleans gave it air-conditioning.

Caipirinha — Creator Unknown

Brazil's national cocktail is made with cachaça, lime, and sugar. Its exact inventor is unknown, though its roots stretch back to at least the 1800s. 


Cachaça, (cah-shah-sah) isn't technically Brazilian rum. Both come from sugarcane, but cachaça is legally its own distinctive Brazilian spirit, distilled from fresh sugarcane juice.

Think of it as rum's Brazilian cousin who insists you pronounce its name correctly.

Belgium

Black Russian — Hotel Métropole, Brussels

Generally credited to bartender Gustave Tops, who reportedly created the Black Russian around 1949 at Brussels' Hotel Métropole for American diplomat Perle Mesta, then U.S. ambassador to Luxembourg.

Vodka + coffee liqueur.

Neither ingredient is Belgian.
Sometimes geography just minds its own business.

Bermuda

Dark 'n Stormy® — Goslings

Born in Bermuda after World War I, when Goslings Black Seal Rum met locally produced ginger beer. Goslings owns the U.S. trademark Dark 'n Stormy, registered in 1991.

Your story about the sailor saying it resembled a cloud only a fool or dead man would sail under is still the story Goslings itself tells.

Basically, Bermuda invented a Moscow Mule with a suntan.

Cuba

Cuba Libre — Creator Unknown

Rum, Coca-Cola, and lime. “Cuba Libre” means Free Cuba, making this perhaps history's most politically ambitious Rum & Coke. 

Daiquiri — Creator Disputed

The famous story credits American mining engineer Jennings Cox with creating it near Daiquirí, Cuba, around the turn of the 20th century.

But rum, lime, and sugar combinations are centuries older.

He may have named the Daiquiri rather than invented the idea of drinking one.

Mojito — Creator Unknown

The Mojito evolved from much older Caribbean combinations of cane spirit, citrus, sugar, and mint, including drinks associated with the 16th-century Draque. By 1936, Sloppy Joe's Havana manual printed a Mojito containing the five ingredients we recognize today: rum, lime, sugar, mint, and soda.

Five ingredients and about 350 years of development.

England

Pimm's Cup — James Pimm

James Pimm created his gin-based Pimm's No. 1 Cup in 19th-century London as a digestive accompaniment to the oysters served at his establishment. It became one of Britain's quintessential summer drinks.

And, of course, New Orleans later adopted it through Napoleon House.

Apparently Pimm's handles humidity very well.

Buck's Fizz — Buck's Club, London

Created in 1921 at Buck's Club in London, the Buck's Fizz combines Champagne and orange juice and predates the Mimosa.

France

Mimosa — Ritz Paris

The Mimosa is generally associated with the Ritz Paris around 1925, but the inventor isn't securely established. Frank Meier was the Ritz's famous bartender, which likely explains why he's so often credited.

And England's Buck's Fizz came first.

Apparently adding more orange juice was enough to create an international incident.

France / England

Sidecar — Creator & Country Disputed

The Sidecar is another cocktail-history headache.

Cognac + orange liqueur + lemon juice.

Simple drink.

Complicated birth certificate.

The earliest known recipes appeared in two cocktail books in 1922: Robert Vermeire's Cocktails: How to Mix Them and Harry MacElhone's Harry's ABC of Mixing Cocktails. Both essentially point toward bartender Malachi “Pat” MacGarry of Buck's Club in London. Vermeire wrote that the cocktail was already very popular in France and had been introduced in London by MacGarry.

That gives London a pretty strong claim.

But France refuses to hand over the keys.

Another famous story says the Sidecar was created in Paris during World War I for an American Army captain who regularly arrived at the bar riding in the sidecar of a motorcycle. David Embury repeated that story in his influential 1948 The Fine Art of Mixing Drinks.

Harry MacElhone further muddied things by originally crediting MacGarry and then, in later editions of his book, apparently claiming credit himself. His famous Harry's New York Bar in Paris consequently became closely associated with the cocktail.

So we have:

London bartender.
Popular in France.
American Army captain.
Paris bar.
Motorcycle.

This cocktail needs a passport more than a recipe.

The Sidecar is particularly important to your book because it's a direct descendant of Joseph Santini's New Orleans Brandy Crusta. Both use brandy/Cognac, citrus, and orange liqueur, but the Sidecar strips away some of the Crusta's ornamentation.

Kir — France

White Burgundy wine with crème de cassis. The drink was originally known simply as blanc-cassis, but became associated with Félix Kir, the longtime mayor of Dijon, who famously served it to visitors after World War II.

Champagne instead of wine makes a Kir Royale.

Ireland

Irish Coffee — Foynes, Ireland

Irish Coffee is credited to Joe Sheridan, chef at the restaurant in the Foynes air terminal in County Limerick, Ireland, during the early 1940s. Foynes was an important stop for transatlantic flying boats, and passengers frequently arrived cold, wet, and miserable from traveling across the North Atlantic.

According to the famous story, a flight bound for America was forced to turn back because of bad weather. Sheridan decided the returning passengers needed something stronger than ordinary coffee, so he added Irish whiskey and sugar to hot coffee and floated lightly whipped cream on top.

A passenger supposedly asked:

“Is this Brazilian coffee?”

Sheridan replied:

“No, that's Irish Coffee.”

And a classic was born.

The drink might have remained an Irish specialty if American travel writer Stanton Delaplane hadn't tasted one in Ireland and brought the idea home to San Francisco.

On November 10, 1952, Delaplane and Buena Vista Café owner Jack Koeppler spent an evening trying to duplicate it. They could get the drink reasonably close, but the cream kept sinking. Koeppler eventually traveled to Ireland, and back in San Francisco they even consulted the city's mayor, George Christopher, who happened to be in the dairy business. They discovered that lightly whipping appropriately aged cream helped it float.

Today, the Buena Vista Cafe still makes Irish Coffees assembly-line style and reports serving up to 2,000 a day.

A proper Irish Coffee is hot coffee, sugar, Irish whiskey, and lightly whipped cream floated on top. You drink the hot coffee through the cold cream—no straw, no stirring.

Coffee wakes you up.

Whiskey puts you back at ease.

Irish Coffee simply eliminates the middleman.

Italy

Bellini — Harry's Bar, Venice

Giuseppe Cipriani combined white-peach purée with Prosecco and named the pinkish drink after Renaissance painter Giovanni Bellini, whose paintings reminded him of its color.

An artist painted a robe. Four hundred years later, a bartender named a drink after it.

​Negroni — Caffè Casoni, Florence

The traditional story begins in Florence shortly after World War I with Camillo Negroni, an Italian aristocrat with a colorful past who had reportedly spent time in America as a cowboy, gambler, and fencing instructor.

Negroni was a regular at Caffè Casoni, where his usual drink was an Americano—Campari, sweet vermouth, and soda water.

One day, Negroni wanted something with a little more kick and asked bartender Fosco Scarselli to replace the soda water with gin.

Gin + Campari + sweet vermouth.

The bartender reportedly replaced the Americano's lemon garnish with orange to distinguish the new drink.

Other customers began asking for “Negroni's drink,” and eventually it simply became the Negroni.

The Oxford Companion dates the development to between the end of World War I and October 1920, when a surviving letter mentions the drink by name.

There's been plenty of argument over the story—including competing claims from other members of the Negroni family—but the Camillo Negroni/Fosco Scarselli account has considerably more historical support than the alternatives.

One of the reasons the Negroni became such a bartender favorite is its beautiful simplicity:

Equal parts gin, Campari, and sweet vermouth.

Three bottles. No juice. No shaker. No complicated measurements.

Even after two Negronis, you can probably remember the recipe.

And the family kept growing: the Boulevardier substitutes whiskey for gin; the Negroni Sbagliato substitutes sparkling wine; and bartenders have created countless other variations.

Aperol Spritz — Northern Italy

The spritz itself dates to the 19th century and Austrian influence in northern Italy, when soldiers diluted local wines with water. Aperol wasn't invented until 1919, and the now-famous Aperol Spritz evolved later.

Basically, the Austrians watered down the wine and the Italians spent the next century fixing it.

Jamaica

Planter's Punch — Creator Unknown

Planter's Punch is less a single recipe than an entire family of Jamaican rum punches.

And it is old.

The famous formula is remembered through the Caribbean rhyme:

One of sour,
Two of sweet,
Three of strong,
Four of weak.

In practical terms:

lime + sugar + rum + water.

A documented Planter's Punch recipe appeared in the London magazine Fun in September 1878, where it was explicitly described as a “West Indian recipe.” The verse called for lemon juice, sugar, rum, and cold water.

The drink's exact inventor is unknown, and that's probably because punches like this evolved naturally in the Caribbean rather than springing fully formed from one bartender's shaker.

Over time, Planter's Punch became considerably more elaborate. Recipes began incorporating orange juice, pineapple juice, grenadine, bitters, nutmeg, and other tropical ingredients, particularly as Caribbean-style drinks influenced American tiki culture during the 20th century.

That's also why you'll find a dozen “authentic” Planter's Punch recipes that look nothing alike.

Apparently, the only truly traditional Planter's Punch ingredient is an argument about the recipe.

Planter's Punch helped establish the Caribbean formula that eventually fed directly into Don the Beachcomber's tiki drinks, the Mai Tai, Zombie, and the entire American tropical-cocktail movement.

So although nobody knows who invented Planter's Punch, its DNA is all over modern cocktail culture.

Mexico

Margarita — Creator Unknown

The biggest historical development is that researchers have found a Tequila Daisy in print in 1936, before several famous Margarita invention claims. Margarita is Spanish for daisy, and the Daisy was already an established cocktail family consisting of spirit, citrus, and sweetener/liqueur.

The Margarita probably wasn't suddenly “invented” by one bartender. It most likely evolved from the much older Daisy cocktail family—the Margarita essentially being a Tequila Daisy.

Six people claim they invented it.

The Daisy is sitting quietly in the corner saying, “Excuse me?”

Peru

Pisco Sour — Victor Morris...Sort Of

American Victor Morris opened Morris' Bar in Lima in 1916 and unquestionably helped make the Pisco Sour famous. But a 1903 Peruvian publication contains a pisco-based sour formula that predates his bar.

The Oxford Companion to Spirits & Cocktails still considers it entirely possible that Morris independently adapted the American Sour formula to Peruvian pisco.

Victor Morris didn't necessarily invent the first pisco sour, but he deserves much of the credit for turning the Pisco Sour into a famous cocktail.

Puerto Rico

Piña Colada — Creator Disputed

Ramón “Monchito” Marrero — Caribe Hilton, 1954
Ricardo García — Caribe Hilton, 1950s
Ramón Portas Mingot — Barrachina, 1963

The Caribe Hilton officially credits Marrero with creating its Piña Colada in 1954, and Puerto Rico declared the Piña Colada its official drink in 1978. But earlier drinks called Piña Colada existed, including your fascinating 1922 rum-pineapple-lime version.

The blender may have a better claim to the modern Piña Colada than half the people arguing about it.

Singapore

Singapore Sling — Raffles Hotel?

Raffles Hotel made the Singapore Sling famous. Whether Ngiam Tong Boon actually invented it remains open to debate.

Argentina — Hesperidina cocktails
Argentina's famous orange-based aperitif Hesperidina dates to 1864 and became enormously popular in cocktails. Probably more interesting historically than recognizable to today's reader, so optional.

Chile — Piscola
Pisco + cola. One of Chile's most popular mixed drinks. Peru and Chile can argue about pisco while everyone else quietly finishes the bottle.

 

Germany — Radler
Beer mixed with lemonade/lemon soda. The famous story credits Bavarian innkeeper Franz Xaver Kugler around 1922, who supposedly diluted his beer supply when thousands of cyclists arrived. The story may be partly legend, but it's wonderful.

 

Spain — Sangria
Wine punches have existed for centuries, so no single inventor exists. Americans became particularly familiar with Sangria after it was heavily promoted at the 1964 New York World's Fair.

Trinidad — Queen's Park Swizzle
Created at the Queen's Park Hotel in Trinidad, probably during the early 20th century. Rum, lime, sugar, mint, bitters and crushed ice—a gorgeous Caribbean relative of the Mojito.

Trinidad & Tobago — Angostura-based cocktails
Angostura aromatic bitters originated here after Dr. Johann Siegert developed his bitters in Venezuela in 1824 and the company later relocated to Trinidad. That little bottle has probably traveled farther around the world's bars than almost any cocktail ingredient.
